Typical Balado Beef Jerky Recipes From Indonesian Western Sumatra

Balado jerky is a West Sumatra specialty made from thin and wide slices of dried and fried dried beef.

Material:
1 kg of meat has been inside, wash it clean
Water to boil
1 teaspoon of white pepper powder
3 garlic cloves, geprak
3 deaf fruit
Salt

Marinade:
3 shallots
3 garlic cloves
1 teaspoon of white pepper powder
1 tsp coriander
1 tablespoon of acidic water
Salt and sugar
Enough water
The oil for frying

Red / green Lado:
10 chilies, cut roughly
8 shallots
1 tomato
1 tablespoon of acidic water
Salt and sugar
Coconut oil



How to cook:

-Boil water until boiling, add spices, add meat, boil until tender.

-Drain the meat, slice it following the fiber of the meat, beat a little with a meat batter.

-Finely ground the marinade, give enough water, salt and sugar, stir until the spices dissolve.

-Soak the meat pieces for about 1 hour.

-Heat the oil, fry the meat with medium heat until it's black but not charred, lift, drain.

-Prepare the ingredients.

-Steam the chillies, onions and tomatoes until soft for about 10 minutes.

-Coarse milled, give salt, sugar and acidic water.

-Saute briefly with coconut oil, remove from heat.
